We have resolved this issue this weekend. There was a lot of tests being done at Future Shop in regards to this all with all kinds of possibilities. Those tests also confirmed what I obtained when I tried it.

With a Plasma,, it is normal that we will loose quality. This is the same either with HDMI or VGA. This signal is intended for something else than a PC output. The quality of a video or an image might seem ok but it is far from being useful when being used for work because the text becomes extremely difficult to read.

So, we went for the LCD route. At first, they tried by keeping the HDMI output. While the signal was better, it was still not good enough.

So, we went for the LCD route with a VGA output. On a Sony Bravia 37", the output is perfect. I run at 1920x1080 and the text is as it is on my laptop.

The next step would be to wait for an LCD capable of handling the new upcoming format at 1400 something which would then allow us to use the 2560x1600 resolution. For now, everything max at 1920. Regular monitors can go up to that resolution but they are only at 30" presently.
