I've never used SQL Server in a mirrored environment, so I cannot speak from experience. But I was curious to know why it wouldn't be recommended in a production environment since I assisted in a few conferences that talked about mirroring, but I don't remember any mention not to use it in a production environment.

It sounds to me that this solution should respond to your need because instant failover is it's main feature.
