I'd Google [(your scanner hardware) +TWAIN +BSOD] to see if there are any known driver issues/updates. The code underlying Server 2008 is basically the same as Vista, so if you find anything related to Vista it may well apply to Server 2008 as well. It wouldn't surprise me if scanner/TWAIN drivers for scanners such as those found in low-cost MFP devices are buggy and not "server-grade".

Some other SWAGs:

- it may be necessary to install TWAIN drivers as an Administrator of the TS box
- it might be worth trying to run your app as an admin on the TS box, to see if it might be a permissions issue
- are the TS boxes 32- or 64-bit? If the latter, I *believe* 64-bit drivers are required. How they would interact with 32-bit VFP, I don't know, it would be another layer of complication.

As for examining minidumps, I've never had to in detail, it's usually been pretty obvious which hardware is causing the issue. If you're seeing this issue at multiple sites, a paid support incident with Microsoft may be cost-effective.
