To me, salad is a side-dish. That's probably how we eat, bit of this then bit of that then bit of this again, and get the tastes mix up. Eating them separately doesn't let them interact much and gives you too much of one thing while excluding everything else. IOW, I love salads and I'd eat them with almost any main dish - but as a standalone dish... a bit here and there, but not regularly.

As I understand it, the reason for serving the salad first is to get the digestive juices flowing so that the harder to digest foods (the proteins) will digest more easily.
