They've become the benchmark for tough, gritty, realistic, violent, edge-of-your-seat movies. The later Bonds have tried to emulate.

Just as the gruelling, harrowing beach assault scenes in "Private Ryan" have become the benchmark for realistic war movies. They all feature bullets whizzing past your ears, the sound of spent shells tinkling to the ground, shaky newsreel like footage, etc.

Incidentally, the death of Bourne's GF in the 2nd was such a disappointment to me, after all they'd been through. I had a similar feeling after the little girl was aliened in Alien 3.
