The type of sauce depends on several things, but (and I'm speaking generally here as I'm sure you could find 17,000 other Texans, and more, who would disagree) we tend to use a "dippin'" sauce for eatin' not for smokin'. Most places will do a dry smoke with a rub and various flavor woods. As for meat, well generally in Central Texas, you're talking beef: brisket, ribs, flank though we will do pork, chicken and turkey.
