Citrix ICA (
http://en.wikipedia.org/wiki/Independent_Computing_Architecture ) supports more clients than plain MS TS but I don't know if it covers all your requirements. You could ask Citrix.
You could consider running a Windows VM on the Mac clients.
By far your most important move will be to wait a day or so and let everyone cool off. Major decisions taken while people are hysterical are almost always suboptimal.
