I notice that if I move the record pointer that will issue the change, but is there any way I can control this and if so, what other options do I have? For example, will that update take place if I select (and subsequently work) on another table?

For your first question, you need to use buffering. (buffering = 5 will not trigger update on each record movement).
For your second question - I'm not exactly sure about transactions - check what sql functions we have in help.
If it's not broken, fix it until it is.
