Well, only a few minutes have gone by and already I've answered my own question...

It turns out that if you call "Set Textmerge NoShow" it has the global effect I was looking for to stop Text/Endtext from outputting to my Set Alternate File.

I'm still confused as to why including NoShow doesn't handle this for me. I know that the NoShow says that it deals with preventing output to the console, but I expected that also meant it would not output to the Set Alternate file.

Either way... Problem solved.
