I've used expedia.com and priceline.com On both you can pick your flight(s) and departure/arrival times. Priceline also has some really good deals (packages) on combined air/rental cars or air/hotels. When you select those special deals though you have to let Priceline pick your flights and rental car and/or hotel (it was worth it because the total cost of the package was less than the total cost of the flights). You just select the departure date and return date and have to live with their choices. Once they (or you) choose the flight, you go online with the airline and pick your seats. I chose to pay 29.00 extra to the airline to have a the economy plus upgrade on united (for the legroom). It was worth it for a really long flight :o)
They say those flights are non-changeable and non-transferrable. However, on my return my first flight was cancelled due to fog and united changed all of my return flights at no cost since it was cancelled due to weather.
