Ok, everyone, thanks for working me through this. Stepping through the code, I found a dropdown that was bound to the property I wanted on the form. Even though it's !-- Commented -- out, it still shows up. I should have known better.

New entities still aren't getting added quite right, but I think we're getting to the bottom of it. Sorry for maligning MM.Net, it's awesome!
