My client already installed Windows 2003, and it works fine, with millions of colors. It is indeed rather slow, but I only notice this when looking at photographs, not when using normal Visual FoxPro forms (without too many graphic elements). But I have seen an option to reduce the color depths on the client side, which I may use if it becomes too slow.
The main problem was to know whether a greater color depth was at all possible, if so desired - and this part seems to be solved.
