You *could* consider SilverLight which is .NET based but will run on a Mac - and maybe look at the LightSwitch beta to simplify development (I confess that I haven't looked at the latter so I've no idea how it really works).

I see elsewhere in the thread that the application must run whilst disconnected but Silverlight OOB should be OK there - written properly the app can easily detect whether it is connected or not and handle data accordingly....

This approach could also circumvent the Mac v MS hardware/software argument since you won't be tied to one or the other....

Plus you get automatic online installation/update, plus....
