I think that's the word I was looking for - is that the "new herring" - the spring fresh stuff that is so tender and tasty? Seems there was one kind that was a special delicacy only available in one season. Best I ever had. I stumbled across it by accident. Like showing up for beaujolais nouveau at the end of November.

( just looked it up and yes maatjes is wonderful - pickled herring we call it here and what is mostly available here - although had to find it "fresh" - i.e. not i a jar for six months before we get it )
