Raw carrots are much better for you, so that's all to the good. Steamed mini carrots are also very healthy.
When I was growing up, and probably when you were, too, the basic approach to vegetables was to boil the daylights out of them. That's certainly the way my mom did it. There go the nutrients along with the water and the end result is especially satisfying to those who like their veggies the consistency of baby food.
The one vegetable I truly can't stand, however prepared, is beets.
Interesting article in the NY Times the other day about the resurrection of sweet potatoes. As recently as a couple of years ago they got as much respect as Rodney Dangerfield, baked under marshmallows once a year only to be forgotten until the next Thanksgiving. The article said they are enjoying a renaissance, especially in North Carolina, the leading producer of sweet potatoes.
