>And, from what I gather, Servoy deploys to iOS?

Servoy can run HTML/JS/CSS based forms from their form designer automatically, data-centric with your code on the server using AJAX, same forms you create and run via smart/rich client. You can create an iOS app wrapper that calls into Servoy as a web service, but Servoy doesn't create any Objective C code directly. You might check out this recent one hour webinar video I participated in, and the cross-platform (dev and deployment), cross-browser, and cross-device is discussed.
