it may have something to do with me installing a named instance and not a default instance. This apparently uses dynamic ports, not the default 1433. I switched to a static port and was able to connect using a string like: tcp:192.168.XXX.XXX,1433\SQLExpress
Now I am trying to work out why using a string like GFSL01\SQLExpress won't work.
I did look at the SQL Server service and see that the Built-in account is Local System, is that what you are suggesting should be Network Service?
