We only rebuild when fragmentation > 20%, otherwise we do a reorganize which doesn't require a file lock.
It sounds like you may be one of those Jack of all trades guys ;-) Hats off to you but I am happy being just a developer. The less I have to mess with the system side of databases, OSes, and networking, the happier I am. I can muddle through when necessary but for me it's scut work.
