For years (about 55) I have been hearing about the effects of flour, sugar and fat on the human body. My interest started when I began weight training. I truly think that the manufacturers of food and beverage products are interested in profitability and not the health aspect. White bread as we know it today was introduced in 1880 in the USA. Marketing convinced people it is better to buy a load of white bread. Who wants healthy bread?

I always enjoyed European style breads (because of the Irish and Polish side of my family). You should be able to take one slice of a good European bread, raise it about two feet above your kitchen table, and drop it. The slice of bread should break through the table. :) One slice is a meal.

We have had a bread in the USA called “Wonder Bread”. My mom always said: “Wonder Bread. It is a wonder you can eat it”! When I was 10 years old, I was at a friend’s house. He offered me a slice of Wonder Bread. Rather than eat it, I rolled it into a small ball just a bit larger than a pea. Lots of air and little nutrition.

I was looking at the Ingredients of an apple pie at Safeway a few days ago. There were over 40! Most were chemicals I could not pronounce. When I make apple pie I use no sweetener and sure have no use for chemicals.

There was a documentary about beef in the USA. A Souix Indian was overweight and went on a diet resembling that of his ancestors. He was given Bison and lost almost 100 pounds in less than a year. The Souix on the reservation have to eat beef and get very fat as they become adults. They live to be about 45.
