And selling it at the price of meat is a scam of even higher rank. The current crop of emulsifiers can hold 30% more water. The downside is that it does break if you freeze the piece, and that it gets all slimy and sticky if it stays in your fridge more than three days - and if you microwave it afterwards, you may get the chemical stink as an appetizer.
