We once made
kajmak, but it's too much work to be done over a few liters of milk. When done over 20 or 50 liters, then it makes sense to do. The one in retail is finally rather good - smells/tastes right and has the right texture. Yes, it's as fat as butter, but I don't care. It's healthy and body needs fats.
Natural fats, that is, that it knows how to process and turn into energy. The artificial stuff it can't, and it just deposits it on the side (and butt) for later, in case it finds a way to use it.
