>>>You want a cycling event? Try LOTOJA http://lotojaclassic.com/main/index.html. It starts in my home town. No, I haven't done it. I'm not that hard core, but I know people who have done it...and finished.

>>>Yeah, we like our cycling here in Utah.

>Serious question -- with that much exertion, don't you need a lot more calories than you're going to get from salad?

Light lunch, plenty of carbs for dinner :-}

>I remember seeing a feature during the last Olympics on Michael Phelps's eating habits. It was stunning how much food he put away. Of course he was burning through it with the amount of training he does.

I've not taken a lot of notice of it but the bike computer makes a stab at calculating how many calories are consumed. I've no idea how accurate it is but it is presumably based on total distance and ascent which are both very accurate. That shows that I'm using about 4000 calories per day. Adding the 2,000 you use anyway just standing about means I'd need 6,000/day to stay even. I don't think I'm capable of eating that much without more practice (;-}) so couldn't keep it up indefinitely. I've certainly lost weight at the end of it.
