I run it on Win7 Ultimate 64 bit with 8GB RAM with no issues.

The most common cause of "Not responding..." is a busy hard disk. Is your hard drive busy while you get these errors?

An antivirus scan can hammer the hard drive.

Another temporary thing that may be happening is Windows may be increasing the sizes of the page and hibernation files on your hard disk. These are hidden files in the root of your C: drive: pagefile.sys and hiberfil.sys. On my system pagefile.sys is 8GB and hiberfil.sys is 6GB. It might take a little while for Windows to grow those files once it notices you've got more RAM. But, I would expect that to be complete within a couple of hours. If you're past that point and still seeing problems it's probably something else.

My understanding is some earlier versions of VFP may not work properly when a lot of RAM is present (e.g. VFP5(?), VFP3 would not run on 512MB or higher unless hotfixed/patched) but I believe those issues were ironed out by VFP9, if not earlier. You could still experiment with SYS(3050) using settings around 256 or 512MB, maybe it will help in your case.
