One good example is any version of Small Business Server (SBS). A typical SBS server has a lot of processes running and even with careful setup two mechanical drives in RAID1 is barely adequate for performance, and even then may not be enough if Exchange is running locally and is heavily used.

Would you use a disk defragger program or just leave it to the O/S ? Windows 2008 R2 is what we are running.
