Jerry,

since this is a POS appl. I dont suppose you are talking about the default menu but some buttons acting as a menu, in that case I believe your best bet is to make use of GDIplus. There are several messages by Cesar Chalom explaining how GDIPlus enables you to make use of Unicode and thus facilitating to show text in Chinese or other on western fonts. Remember you must install the chinese language pack LIP in your Windows system

To facilitate the enduser to switch between English - Chinese keyboard / language your best option is to make use of Steve Black's Multilanguage module.
