There is a very cool app call Swype that lets you just drag from key to key on touch keyboard very quickly. I can now enter text accurately that way about as fast as I can touch type on a full size keyboard (which I do very fast) If you pop a whole $3 for the full version there is a Dragon Dictate built in that is amazing for speech to text.
