Alas, what you're talking about often isn't real chicken breast as you or I would know it. In many/most restaurants, sandwich chicken is pressed chicken meat but they're paying pennies extra for a more convincing effort. Look very closely and you'll see muscle strings reminiscent of a real chicken breast- but it's cunningly reconstituted. The chicken breast you choose yourself and grill with your own favorite condiments, increasingly is as good as it gets. ;-)

FWIW, the Prime Minister of New Zealand often wanders around the place like that. He was having a cup of coffee in the Matakana Markets one day and more recently he was in the local supermarket where he encountered my youngest daughter all bedraggled after swimming practice. He asked her "have you been swimming?" ... "Yep." ... "Was it good?" ... "Yep." and on we all wandered. That's kiwi understatement for you. ;-)
