Have you actually tried to use RDP over a touch only interface? It's pretty terrible to the point of being an emergency only solution. It's really that bad...

The only effective way I see to run VFP apps is to build an HTML front end and build a responsive app that can run on a tablet or phone. Or use some other technology that can build a mobile app and access fox data, but the Web approach stills strikes me as a the widest ranging implementation.
