We are looking for additonal support as once deployed, we do not have much access to analyze those logs so if we could pull that out directly from the Web application, that would be useful.

Just as general information, in Linux there is the "tail" command.

For Windows you can Google [tail command windows]

This is primarily aimed at text log files rather than something like Windows Event Logs, but if you've already pulled log entries into some other format it might give you some ideas.
