Goose is common on christmas and on more catholic areas on Martin's Day. The Frankfurt meetings are around Martin's Day, for what I know. I was not there at those days - couldn't effort it to my regret. 2014 was my first time and now I regret it even more. :(
I think one goose the year is enough. Possibly a duck the other day.. It's a lot of work (I need more or less three days) and it requires good dumplings (I need to invite my divorced wife, she is thuringian) and good red cabbage (girl friend is the master there): Then my brother and my mother will join and for nine persons even the biggest goose is a bit small. :)

Geese are fine even frozen and it needs only an oven, apples (sour!) and mugwort. There must be some source in the U.S. :)
