Wagama looks a lot like the MoschMosch group we have here, from interior design to menu, which is here in central germany in a few cities.

I think it is safe to say that even in traditional restaurants not everything is like in the home land, but a bit targeted to the taste or expectation of the actual country - a bit less in japaneses restaurants than other asian cuisines, but inside-out rolls can be found here in most places and the knife-throwing cooking style coming from the states can be watched in a few restaurants as well. Customer decides if he comes back, better to have the option to choose.

Vapiano targets italian style noodle with salads from mediterrenean to cross-over, customers lining up at cooking stations modelled to look like high class fast food take outs and bringing their food themselves to their places. Most of the founders are out, but and they are well over 100 places now. Dunno if the claims have none, a small or a broad foundation or there is one paper/reporter who has been pissed off and tries to dig around them more than usual. Perhaps a bit of both...
