It's very unlikely you'll ever need the entire .OLD folder. Only time I ever needed anything was some of the preferences folders under USERS, and I was able to copy that somewhere else.
Unless there's some specific difference I'm not aware of, what you're describing is the same install/upgrade process that MS has had for years.
Aside from some of the shortcomings of the Edge browser, overall I've been satisfied with Windows 10.
Historically, I liked XP, had issues with Vista, liked Win 7, was quite irate about Win 8 (and thought Win 8.1 was a bit better but didn't go far enough), and have overall been OK with Win 10 after using it for roughly 3-4 months.
