Nick,
I support several Fox 2.6 DOS apps successfully running on Win NT workstations. We run the extended version of FoxPro. We had a few problems at first, but have worked them out.

Try the following...
1. In the properties window of the FoxPro icon-
- [Memory page] Don't use the default memory settings (Auto). It seems the Win NT memory manager causes FPD2.6 to run in the standard mode. Instead, set DPMI memory to 4096 or more. FPD2.6 doesn't care about extended or expanded memory, so you can leave them on Auto. On most of our machines that was enough, but some required us to set Conventional memory to 630. If you set it to 640 Windows NT will reset it to Auto which caused those machines to come up in Standard mode.

- [Program page] Run the FoxProX.exe in the Cmd line. Usually Fox.exe will work, but it uses up a few Kbytes of memory, and if you want to run the extended version anyway, you may as well run it explicitly. Check Close on exit to be sure the Window closes when FoxPro quits. Click on the Windows NT button to see where to find the Autoexec and Config files. See below for more info.

- [Screen Page] Windowed or full-screened doesn't seem to matter, though I prefer windowed. If you like FoxPro in VGA50 mode, you can set it in the Config.fp and the Window will adjust when FoxPro loads.

2. Config.nt - This is like the Config.sys file in DOS. Be sure the FILES=## line gives you enough files. Here is mine.
dos=high, umb
device=%SystemRoot%\system32\himem.sys
files=80

3. Autoexec.nt - Corresponds to the old AutoeExec.BAT. Here is where you load DOS CD-Rom extensions, network redirector, set your DOS Path, and capture printers. WinNT does not automatically provide printer services to DOS sessions.

NOTE: you can write custom Config & autoexec files just for FoxPro. Just fill it in the the box the you see when you press the Windows NT button on the Property window.

This is alot, I know, but they have worked on all of our NT machines.
