Old fish has an awful smell/flavour and slimy consistency that puts a lot of people off. But Al will have access to freshest salmon and other fish and for you guys there's great fishing off Hawaii and West Coast and surely on the other coast too. The key is to eat it fresh. It can be done: I've had awesome snapper and tuna entrees in a fish restaurant in the Midwest, thousands of miles from the sea.

FWIW, the very small New Zealand landmass has more coastline than the continental USA and the shape means that in inhabited regions, if you drive for half an hour and don't hit the sea- turn 90 degrees and you will. The narrowest distance between East and West Coast in the busiest city of Auckland, is around 1km = less than 2/3 of a mile. At the moment you could throw out a line hooked with just about anything and catch a good eating fish.
