Your first resource for this type of issue should be Atlassian.
Failing that, we need to know the platform on which those servers run. Is it Windows? Is it virtualized?
To do backups on Windows without downtime requires that the backup product use VSS (Volume Snapshot Services). This can be direct using Windows Server Backup. Or, if the servers are virtualized on Hyper-V, you can use a product such as Altaro running on the host.
