Nick,
I've done this for almost two decades.
The most ugly on it is VFP Binary codes like VCX FRX etc. Fernando Bozzos FoxBin2Prg
http://vfpx.codeplex.com/wikipage?title=FoxBin2Prg&referringTitle=Bin%202%20Text%20Extensioncomes around this and will create nice text files all modern tools will make great use off.
I recommend git, because it's not very tricky to automate, and there is a huge Linux side community for it. One need to understand git and the adminstration of multiple workers what is not as simple as on VisualSourceSafe but it pays.
I do this for more then two years now and it runs pretty well.
No realy good IDE integration for VFP, nobody likes to reinvent projektmanager.
