In the last deployment of a cloud solution I was involved with, we went with all the latest technology. I have heard Windows Server 2016 is solid and new installations should consider it. If I would have to redo the last project, I would simply opt for it as it is now available.

Sometimes, on licensing issue, we might not necessarily have the latest versions. For example, even if SQL Server 2016 was available, it wasn't, as is, available to ISP to offer the licensing to their clients, at the time we deployed. So, we had to make the decision to go with SQL Server 2014. Other than that, everything is recent.

The more recent technology you deploy, the longer your infrastrucure will last.
