Recording itself I've seen done back in 1997, but that was running non-stop, creating a new .wav file every 60 seconds, i.e. a full log.

For this kind of AI that you want you'd need a good speech recognition which would recognize the start and stop catchprases from the operator ("card number please", "thank you")... and for that I don't really know what would be available... unless you want to give the operator the option to suspend/resume recording at will, and have them supervised at random. If that's an option, you can use any ActiveX recording control out there and write it yourself.
