Settings...Windows Update...Restart options

Schedule a time - turn it off

I've also configured it via https://docs.microsoft.com/en-us/windows/deployment/update/waas-wu-settings#configure-automatic-updates

In my case I chose Option 3. The only downside I've found is you get nagged once or twice a day to install Windows Defender updates (if that's your AV).

The above require Windows 10 Pro. I don't know of any options if you're using Win10 Home.
