SaaS means your product runs on your servers. On-premise means it runs on the customer's environment. The deciding point is where/on what hardware is the components of your app actually running.

Accessing remotely and/or installing via VPN doesn't change the fact that your final installed product runs on your customers' environments, therefore making them on-premise applications.

By default you won't be storing any customer data outside their environment. But if you're interested in full disclosure you might want to include information about some other things, if present:

- Your app "phoning home" for license enforcement or any other reason
- How you lock down your VPN access so hackers can't snoop or use the same method you use i.e. VPN type (hopefully not PPTP), that you're using strong passwords that are not stored either in the VPN client or RDP client, that your remote computer is protected against malware infections that might get transmitted to your client(s) etc.
