VMWare ESXi is a "hypervisor" that runs on server hardware. It is used to create, run and manage multiple "virtual machines" (VMs) on one physical server computer.

In order to run your VFP app, there must be at least 1 Windows VM configured and running. For all intents and purposes, that VM is the same as a physical Windows workstation. You set up your app as if it were a physical computer. I'm not sure what you mean by "installs my app onto her network drive" - if she has a separate computer (or a second VM) acting as a file server, you should be able to install your data files to that, if for some reason you don't want to install them on the primary VM.

Remote access: simplest to set up are 3rd-party mediated services such as LogMeIn, TeamViewer etc. Those don't require any configuration of routers etc other than ensuring that the VM where your app is installed is allowed to access the internet.

If you'd rather use a VPN for remote access, then in addition to setting up the border router for that, you may need to configure virtual networking on the VMWare host so that external users are allowed to connect to your VM via Remote Desktop. If that's not already enabled she may need some help to do that. Using something like TeamViewer is a good way to quickly get remote access; although the experience isn't the greatest you can use it to set up something better (Windows RDP is the gold standard).

So, other than (potentially when) setting up remote access, you (or more accurately, she) should not have to deal with VMWare ESXi. Consider it a software layer beneath your Windows VM that you'll probably never see.
