You might want to be careful with that display adapter. It looks like an unusual commercial product for digital signage and display wall. There might be unusual limitations on its display modes. I couldn't find a listing on Amazon. I did find this: https://www.amazon.com/VisionTek-Radeon-7750-GDDR5-MiniDP/dp/B00C7EPSVS/ref=sr_1_1 (7750 was released February 2012).

Another possibility would be 2 adapters, each with 3 DP outputs. One interesting option would be 2x Quadro P400 https://www.amazon.com/PNY-NVIDIA-Quadro-Professional-Graphics/dp/B06X9PW5DZ/ref=sr_1_1 . Apparently Quadro cards support nView, which is an advanced window manager which can store configuration profiles: https://www.pny.com/nvidia-quadro-p400 (shows advanced software support). There are videos about nView on YouTube.

That Quadro is based on a few-years-old nVidia chipset (GP107 c.2017, 14nm technology), which probably explains the low price - normally when I hear "Quadro" I hear cash registers ringing. That chip is also used in the GTX 1050/1050Ti. The Sapphire claims it's based on AMD "GCN" (28nm) but doesn't specify the generation, it's not new either. Ongoing software/driver support for the Quadro should be good, I'm not so sure about the AMD.

So-called "MST hubs" are available as well.

There are Windows desktop managers available as well e.g. https://windowsreport.com/best-virtual-desktop-software/ (I haven't tried any of them). I imagine they can store profiles and let you swap rapidly between them.
