You can always try the Office 365 Quick Repair: Control Panel...Programs and Features...right-click on your M365 apps installation...Change, then select "Quick Repair".
The "Online Repair" option basically reinstalls the apps completely (might preserve your settings) and can take a while but is an option for those having serious issues with the Office apps.
This is a low probability suggestion but over the last month or so I've had a couple of clients with very weird behaviour in Windows 10, which was fixed by running the System File Checker. From an elevated command prompt run
sfc /scannow
