If you don't trust me with the code/data why am I here? That's 'trustworthy', particularly with sensitive data or proprietary code. Maybe a better way to put this is: if you think having them sign a NDA is just paperwork versus you NEED them to sign the NDA.

Loyalty is a two way street. I left a job after 14 years I no longer felt my employer was loyal to me. Any monkey could do my job, so why should they bother? Fooled them, it took THREE monkeys to do my job.
