I was able to figure out that it only happened when storing into a memo field in the error log and only after the application’s reindex utility indexed the errorlog table. I instead recreated the table, and added the indexes manually, and all is well.

Just a stab in the dark -- could the situation be connected code pages? I do remember running into various degrees of wonkiness whenever in situations where East Asian codepages were in effect (i.e. Chinese, Japanese, Korean).
