If you
move a message from Gmail to a local PST file then yes, you have that message in that PST, but only in that location on that device. It will no longer be visible on other devices. If instead you
copy, the message will still be visible on other devices (albeit not organized, unless you use the Gmail "label" function:

An Exchange back end lets you create mail subfolders just like you can with a local PST file.
