I wrote a POS in FoxPro 2.0 a number of years ago for cruise ships. A problem I had was that tables corrupted easily due to the harsh electrical environment...is this going to be a networked application (multiple POSs?). The reason I am asking is that you may wish to consider doing this as a two tier application with a manager's PC or server PC running SQL Server to keep things nimble at the front-end and to avoid data corruption.

You also should look at the transaction volume before deciding on the platform...sometimes, Windows applications don't do so well in a rapid-keystroke situation and, in those cases, you may wish to consider a (gasp!) CUI in a DOS window.
