In that menu you see Open, Explore, Find and when we installed Norton AntiVirus an option "Analyser avec norton AntiVirus" have been added to that menu. I want to delete that new option.

You're going to need to find the CLSID associated with the Start button (I don't know what it is) and delete the Shell subkey associated with the action you want to have taken off (it should have a key name that matches the text shown in the context menu.) This is all under HKEY_CLASSES_ROOT
