Sorry, I'm not writing with any help but I'd sure be interested in how it works out for you since, I hope to also (someday) try to set EDI up in my application. If you have the time, I'd like to know how it went for you.(recommendation&resources)

PS: I'm not sure how much help it will be, but I remember Microsoft having white papers on their web sight about EDI within their Activestore concept. Check it out with a search in microsoft's website under activestore, or EDI for that matter.
