Your main icon (the one that appears on the desktop) is set in the Project Designer. Go to Project/Project Info and follow the screen to add an icon.

Window name for your main screen and other items can be set in a CONFIG.FPW file and in your MAIN program. The CONFIG.FPW is a text file which is read before your EXE is shown on the screen. You can include lines like
TITLE=NEW HORIZONS TRACKING PROGRAM

In the MAIN program you can set the window state (full size, iconized) and other properties.
